A high protein cauliflower cheese soup that’s simple, comforting and perfect for a light, balanced meal.
Ingredients
100 g Arla low-fat cottage cheese
100 g Bold Bean Co Queen chickpeas (beans and stock)
30 g Saint Agur blue cheese
140 g cauliflower
100 ml fresh chicken stock
Method
Cook the cauliflower in the stock until it is cooked enough to pierce with a knife. (I microwave in the blender pot). Add the rest of the ingredients and blend. Season. Tada.
I added crispy kale that I cooked in the air fryer. I sprayed it with oil and cooked for 4 mins at 170° (this isn’t included in macros)
