Miso Chickpeas with Jammy Eggs & Crispy Sage

A high protein, high fibre chickpea dish with jammy eggs, miso and crispy sage, full of flavour and perfect for a simple, balanced meal.

Ingredients

2 eggs

1 tsp extra virgin olive oil

fresh sage, a few leaves

2 garlic cloves, finely sliced

1 medium red chilli, finely sliced

2 anchovies

100 ml chicken stock

7 g (~ ½ tbsp) white miso

160 g chickpeas

60 g cavolo nero, sliced

Method

Boil a pan of water. When boiling, add the eggs and cook for 7 minutes.

Meanwhile, heat the oil in a pan and fry the sage until crisp. Remove and set aside. Add the garlic and chilli and cook until lightly golden, then add the anchovies.

Add the stock and miso, stirring to dissolve. Add the cavolo nero and let it wilt, then stir in the chickpeas and simmer gently until everything is cooked and the anchovies have melted into the sauce.

Peel and halve the eggs. Spoon the chickpeas into a warm bowl, top with the eggs and sage, and finish with black pepper (you likely won’t need salt).
